Something cheap and easy to throw together in the morning or the night before a busy day of classes.

Cheapest option is always to use what you have, Bananas are a great smoothie food and one of the cheapest foods around, but get creative with whatever you have.

Quick-n-Easy-Student-Smoothie
  • 2 Bananas
  • Chocolate Soy-milk
  • Pea Protein powder
  • hand full of spinach
Blend the spinach, pea protein and a splash of chocolate soy-milk until totally smooth. Add the banana in sections and blend until smooth.

Toss in a travel mug if you are supper short on time.

Enjoy!

Veganmofo: lazy baking

Been a bit of a lazy day, but before I headed off to class last week I whipped up a batch of Banana bread from 100 Best Vegan Baking Recipes.

Like a good banana bread this one came together easily and quickly with lots of down time. The result was a soft subtly sweet centre and light crust. Great morning snack!

Sadly I had no walnuts to ad and didn't feel like chocolate chips. Eat Warm with Earth Balance and cold coffee.

A day in the kitchen and couch

Today Zoe and I watch movies all day while cooking up a variety of stuff.
First up WW ginger carrot muffins a-la-Zoe.

I'll be asking her for the recipe a basic WW muffin to which various add-ins/changes can be made.
For these she chopped my candied ginger chunks and grated two carrots.

So I figured today would be a cooking day, and I pulled out Yellow Rose Recipes to make the tamale pie I never got to try during testing. Being out of corn meal and a few other essentials, I made a bastardized version of my own. Using crushed corn chips in place of the polenta, follow your heart cheddar and Joanna's Nacho sauce for the top, Yves Mexican crumble (had no tvp T.T), and a way to big can of kidney beans with a smaller can of corn (no frozen). Also, no tumeric or cummin so I just left it out (SHH!). Still turned out amazing.

Next up Zoe stewed lentil stew all day to produce this gloriously thick rich filling bowl.

And I decided to do banana bread, a-la Kittee.
Which lead to making Kittee's peanut butter fudge, but Zoe wanted chocolate and coconut fudge... so we just added some. And added a little more of everything else.

Product review!

Holy awesome. It's not chocolate, but the slightly graining consistency of Carob has grown on me through these delightful bars of wonder.
Goldies Premium Carob Bars
Are sweet, hydrogenated oil free, contain no refined sugars, no chocolate, no caffeine, no cocoa, no preservatives and surely no conservatives either. But man are these babies good. Today's feature is the delightful banana, the odd thing is after the sweet grainy carob goodness (seriously close to milk chocolate on the sweet scale but better) comes the bananay punch, it honestly taste like real bananas and banana candies all at onces. The taste is there, present, powerful but not over bearing. Almost a swallow and enjoy kinda presence.

Great treat, decently good for you in a "I'm still a candy bar" kinda way. Over all a 8.5/10.
Enjoy em.
