Veganomicon: Ultimate cook book/I make and eat a salad

:GASP!:

But it's true. Thanks to Veganomicon I now have two salad recipes that don't make my stomach and mind quake with fear. No rabbit food here. This particular salad involves lovely marinated and roasted portabellos and diced chunks of fatty and yummy avocado. That will have known salad haters and nose-sticker-uppers (read: yours truly) digging in with both forks, because real vegans double fist it. Again this is mostly a food porn post, but real posting to return any day now!

For those of you with the cookbook the only changes I made was the addition of mixed greens, spinach, extra dressing and sauted onions.

Despite my lack of kitchen, I have still been eating and photographing but with my new job and early, early hours blogging has taken a back seat (I apologize). So to hold you foodies over, here is another set of eats from our kitchenless home.

One of the absolute easiest and go to meals this past month has been roasted potatoes and packaged vegan meats. Sad but true. Roasted veggies (primarily potatoes) are easy and simple to prepare, very basic/minimal chopping and then tossed with spice mixes and oil you can toss it onto a baking tray and slide it into the oven and forget it. You can even reuse the same baking sheet for the next few batches (not optimal for sanitation, but with no sink for dishes I was comfortable with letting this slide). I just threw the vegan bacon onto the baking tray once the potatoes where soft.
Another dish that brings shame to the supposed health of a vegan diet but is right at home on this blog. Mashed potatoes topped with fried yves veggie dog slices and onions. Fluffy, crispy, greasy and fatty. Excellent. Look at how it shines (... ok, now I feel a little like paula dean).
And another quick shot of the bechemel sauce from last post, I just enjoy the kitchen carnage hidden in the back.

Rez Life Day 1

Well I now live @ Dalhousie, in Rez which means no kitchen coz I am poor. I do have a fridge though! and unlimited food from the cafe.
They even have a vegan station, but so far it doesn't seem to amaze.
I think there were actually slices of cold, raw tofu there :shudders:.
They did have a nice chickpea, spinach tomatoe "casserole", i use the "" because it was called casserole but was more like a soup. Good and there all day.... year variete not much, there seems to be one hot vegan meal (and maybe a soup, it seemed empty today thought) and it's served all day...
There are also fries, plain white rice, plain brown rice, some Spanish rice (vegan ? didn't ask& did eat), cold rice salad, chopped veggies and fruit. Assorted cereals and soy milks/rice milks
But I am going to be missing my kitchen like crazy.. so if you want someone to make you vegan food in your kitchen and your in halifax, call me!

My closet, you can see my cooking "self", well kinda see it. Tupper wear, apron, oven mitt, chop sticks, cutting boards, spatulas, measuring cups, spoons, brushes etc












Again in the closet, you can see my giant fridge (4.3 cube feet!! with veggie crisper and freezer), on top of the fridge you can see my assortment (read small mountain) of dry/caned food and spices. Seriously this shit it wedged between my desk there is nooo room at all.
I also have a rice cooker but I am to lazy to try and take another pic with my laptop, cause it akward. I promise to unpack my camera and take some bad quality photos with well a camera.
